I made these this past Sunday evening. They were a big hit with friends we had over that night, and with Hubby's co-workers. Peanut butter & chocolate are such a great pairing. This recipe is the result of combining 2 different recipes.
Double Peanut Butter Chocolate Kiss Cookies
1 bag peanut butter Kisses
1/2 cup + 2 tbsp butter, softened
3/4 cup creamy peanut butter
1/3 cup granulated sugar
1/3 cup brown sugar
1 egg
2 tbsp milk
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
additional granulated sugar for rolling
Heat oven to 375 degrees.
Remove wrappers from chocolates.
Beat butter & peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar & brown sugar; beat until fluffy. Add egg, milk & vanilla; beat well. Stir together flour, baking soda & salt; gradually beat into peanut butter mixture.
Shape dough into small balls - about the size of melon balls. Roll in granulated sugar; place on greased baking sheet (makes 2 sheets worth). Count out peanut butter kisses for each of the cookie balls made and set aside.
Bake 8-10 minutes or until lightly browned. Right before removing cookies from oven, melt 10 kisses and remaining butter in a small bowl in the microwave (about 45 seconds).
Remove cookies and quickly drizzle chocolate over each cookie. Immediately press a kiss into each cookie, then remove from cookie sheet to a wire rack. Cool completely.
