Omg, these are fabulous!!! The cranberry and chocolate are a great combination. The orange zest really brightens them up and adds a bit of pizazz. I made these this evening. I had found the recipe on a food blog and made a few minor changes. I will definitely be making these again. Definitely a great holiday treat!
White Chocolate Cranberry Bars
1/2 cup butter, softened
1 cup granulated sugar
1/2 cup brown sugar
2 cups flour
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
zest of 1/2 large orange
1/8 tsp ground nutmeg
2 eggs
1 tsp vanilla
3/4 cup dried cranberries
3/4 cup white chocolate chips
Preheat oven to 350 degrees. Coat an 11x7 pan with cooking spray.
In a medium bowl, whisk together flour, baking powder, baking soda, salt, zest, nutmeg. Set aside.
In bowl of a stand mixer, beat butter and both sugars on high until soft and light in color, about 3 minutes.
Turn mixer to low and beat in eggs, one at a time, and then vanilla until thoroughly combined.
Slowly incorporate flour mixture.
Remove from stand mixer and stir in cranberries and white chocolate.
Spread batter in pan evenly.
Bake 25-30 minutes or until toothpick inserted into center comes out clean.
Cool on rack for 1 hour.
