Here's a great recipe for barbecue sauce courtesy of Tyler Florence, and it's easy to make.
Ingredients:
2 slices of bacon
4 sprigs of fresh thyme
1/2 onion, chopped
3 smashed cloves of garlic
2 cups ketchup (I prefer using a sweeter ketchup)
1 cup peach preserves (I used a low fat, no sugar apricot preserves and it turned out great)
2 tablespoons Dijon mustard
2 tablespoons brown sugar
1/4 cup molasses
2 tablespoons red wine vinegar
1 teaspoon ground cumin
1 teaspoon ground paprika
Directions:
Heat two tablespoons of olive oil in a sauce pan and turn on medium. Wrap the bacon around the thyme place in the olive oil to render the bacon for about 4 minutes. Add the chopped onion and smashed garlic and letter sweat for 5 minutes, don't let onions color, only turn translucent. Add the rest of the ingredients and stir to mix well. Turn heat down to low and let simmer for 20 minutes, stirring occasionally. Strain sauce through a wire strainer or thin colander to remove onions, garlic, thyme and bacon.
That simple.
It's a good, sweet yet a hint of heat, southern barbecue sauce.
