The Best Shrimp Cocktail

Ingredients:

2 lbs of large shrimp
Olive Oil (or Vegetable/Canola)
Old Bay


For the Brine:
1/4 cup salt
1/4 cup sugar
1 cup water
2 cups ice


Directions:
Shell and de-vein the shrimp, removing any unsavory insides.

Place shrimp in large bowl and add salt and sugar.






Mix shrimp, salt and sugar around and add water and ice. Give the mixture a few swirls and let rest in your sink or on your counter top for 20 minutes.









After 20 minutes, place a cookie sheet in the highest rack in your over and turn on the broiler.

Meanwhile, rinse the shrimp with water, and pat dry with a paper towel. Drizzle oil over the shrimp and sprinkle liberally with Old Bay. Stir mixture to evenly coat shrimp.

After five minutes, take cookie sheet out of the oven and place shrimp on the cookie sheet. Cook for two minutes exactly., Remove from oven and flip the shrimp with a pair of tongs. Put the shrimp back in the oven, on the highest rack, and broil for one additional minute.

Remove from oven and transfer to a cold cookie sheet and place in the refrigerator immediately until chilled.

Serve with cocktail sauce.
