Ingredients:
1 onion
1 shallot
3 cloves of garlic
1/4 cup olive oil
1 celery stalk
1 carrot
1 tablespoons of brown sugar
1 28 ounce can of whole tomatoes (I used roma tomatoes, they're a little sweeter)
1 cup vodka
1 cup cream
1/4 cup parmesan cheese
Directions:
Sautee 1 onion, 1 shallot and 3 minced cloves of garlic in 1/4 cup of olive oil over med-high heat until onions are translucent (about 5 minutes)
Add 1 chopped celery stalk, 1 diced carrot and 1 tablespoons of brown sugar (or regular sugar) and allow that to permeate for a couple of minutes, letting the celery cook
Add 1 large can of whole tomatoes (28 OZ....I used canned roma tomatoes)
Reduce heat and simmet for about 30 minutes, until mixture thickens
When mixture has thickened, place the sauce in a food processor/blender and blend until smooth. Return to pot
Stir in 1 cup of vodka and let simmer down for about 20-30 minutes (until mixture is reduced by 1/4)
Stir in 1 cup of cream (cream should be at room remperature) and return to simmer
Stir in 1/4 cup of parmesan cheese until blended through.
Let mixture rest on low for about 5-10 minutes for flavors to mix.

I served this over a penne pasta with a breaded and baked chicken breast.
