Couscous Carbonara


Last weekend the weather was nice, and it seemed like a perfect day to fire up the smoker. I opted for a beer can chicken since it was just The Wife and I. Rub the chicken with salt and pepper, inject with bourbon and five hours later it was fall off the bone tender and pulled.

I wanted to do something different, and get out of the "sauce on a bun barbecue" box. Then it hit me...a smoked chicken carbonara.

Rummaging through the pantry, I didn't see any pasta, but we did have couscous. Hmmmm....it just might work.

Ingredients:
Couscous
Olive Oil
4 pieces of Bacon
2 Sliced Shallots
Smoked Chicken
Feta

Prepare Couscous as directed.

Cut bacon into 1/4 inch strips and saute in Olive oil.

Stir in Shallots and cook for 2-3 minutes until translucent.

Stir in smoked chicken and stir to combine. Let cook for 2-3 minutes.
Stir in couscous and drizzle with olive oil add crumbled feta and stir to combine.

Serve with an additional drizzle of olive oil.
