Carbonara Recipe

Ingredients:

1/2 lb of pasta of your choice
1 egg
1/2 cup of fresh grated Parmesan cheese
4 slices of bacon
3 tablespoons of Olive Oil
1 clove of garlic

Directions:

Cook pasta as directed on box...While pasta is cooking prepare sauce:

Render bacon in olive oil until bacon is cooked, not crispy, but not flimsy.

Mince garlic and put into bacon/olive oil mixture and "sweat" for a few minutes.

When pasta is done cooking, reserve 1 cup of pasta water and place pasta in bacon mixture.

Stir for 2 minutes so pasta can absorb bacon and garlic renderings.

In a separate bowl, stir egg and Parmesan cheese together (feel free to go overboard on the Parmesan. I used nearly a cup.)

When pasta has been stirred in bacon mixture for 2 minutes, remove it from heat from 30 seconds and pour in egg mixture.

STIR CONSTANTLY. YOU DO NOT WANT TO EGGS TO COOK LIKE SCRAMBLED EGGS.

Mixture will be very thick...add pasta water until you get the consistency desired.

Give a few fresh grounds of black pepper and turn pasta with tongs.

Serve hot.
