Chicken Quesadilla Stuffed Jalapenos


This is a great, fairly healthy recipe that I can't, for the life of me, remember where I got. I modified it just a little bit and they turned out wonderfully. Its such an easy recipe and the presentation is pretty. Be careful not to wipe your eyes or any cuts while cleaning out the jalapenos! These make a perfect appetizer or party food. They aren't too spicy either - just the rite amount of bite.

Chicken Quesadilla Stuffed Jalapenos

20 medium fresh jalapenos
1lb chicken, cooked & shredded
1 cup shredded Mexican blend cheese
1/2 cup lime & cilantro Rotel tomatoes, drained
1/2 tsp ground cumin
3/4 tsp chili powder
1/4 tsp salt
1/2 cup fat free sour cream
1 dollop whipped cream cheese

Preheat oven to 400 degrees.

Lightly grease baking sheets.

Cut jalapenos in half lengthwise. Remove seeds and membranes with a pairing knife and spoon.

In a medium bowl, combine chicken and remaining ingredients. Spoon mixture evenly into jalapenos. Place on baking sheets.

Bake 20 minutes or until tops are golden brown.
