Indoor Shredded Pork Barbecue

Got this recipe from Dad. Being a good southerner, I love barbecue. And while The Mrs. hasn't let me get a smoker yet, this makes as good a pulled pork as you could do without one. And like the TV commercials say, you just set it and forget it. A little salt, a little pepper, and 8 hours in the crock pot and this baby shreds apart. From there, it's all BBQ sauce, a little slaw and hot sauce. Or, use left overs for an incredible cubano sandwich.

Ingredients:
1 Pork Butt Roast
Salt
Pepper
Garlic
Chicken Stock
Liquid Smoke - Optional
Directions:
Generously rub pork with salt, pepper and garlic and place in crock pot.
Add enough chicken stock to cover half of pork roast. Give a couple of drops of liquid smoke for a smoked pork flavor (this is optional)
Cook on low for 10 hours.
Remove roast from crock pot and when it is cool enough to handle, using two fork, pull from center out, shredding pork.
**At this point, you can serve as is, or lightly cover in barbecue sauce and place in a 350 oven for 10 minutes to absorb the sauce.
