Saucy Mama Cracked Pepper Portobello "Pizzas"
For the Saucy Mama Recipe Contest, we wanted to include at least one vegetarian dish - and this is a little more hearty than the Pimiento Cheese Dip.
These personal "pizzas" are the perfect appetizer to take to a party. Because of their size, they make instant individual portions. The Saucy Mama Cracked Pepper Marinade gave the portobellos the a great flavor base to compliment the goat cheese - and the sun dried tomato gave everything a hint of sweetness.
Saucy Mama Cracked Pepper Marinade
6 portobello mushroom caps - I found the smaller size, about 3 inches works best - otherwise it's too large of a portion.
One 4 oz. log of goat cheese
1 jar of sun dried tomatoes
Wash your mushroom caps and pat dry.
In a large bowl or shallow dish, place you mushroom caps and cover with Saucy Mama Cracked Pepper marinade and set aside for 30 minutes.
Preheat your oven to 350.
After 30 minutes, place your portobello caps in the oven, ribbed side facing up and bake for 10 minutes.
Remove from the oven and set oven to broil.
Slice your goat cheese and place on top of your portobellos.
Place sun dried tomatoes on top of the goat cheese.
Return to the oven and broil until cheese has melted slightly, but remove before it burns - about 3 minutes.
It's that simple - Enjoy!
