Saucy Mama Cubano Cups

The Wife and I love Cuban food, Cuban sandwiches especially.  When we were invited to enter the Skinny Mama healthy recipe contest - with the charge of using Saucy Mama Mustards to make a healthy recipe - I knew I wanted to find a way to make Cuban sandwiches.  But how to make a gooey, cheesy, double pork sandwich healthy?

Meet the Cubano Cup.  Using a mini muffin pan, you get a gluten-free, low-carb and bite-sized Cuban sandwich without the guilt.

You get all of the flavor of the Cuban sandwich, without the bread, and by replacing the sliced pork with turkey, it's lower in calories, too.  And it doesn't hurt that you can make these ahead of your next party and pop them in the oven 10 minutes before your guests arrive.

Saucy Mama Cubano Cups

Ingredients:
Sliced Ham
Sliced Turkey
Shredded Swiss Cheese
Pickle Slices
Saucy Mama Dijon Mustard

Directions:
Preheat your oven to 450 degrees and grease your mini muffin tin.  Using roughly a three inch cup, make circles out of your ham slices and place them in the muffin tin. We found that our daughter's Beatrix Potter teacup was the perfect size.


Apply a dollop of Saucy Mama Dijon Mustard.


Now, using a slightly smaller circle, a shot glass works perfect here, cut circles into your turkey and place over the mustard.


Next top with pickles.  And cheese.


And bake for 10 minutes, or until cheese has melted and ham has started to crisp around the edges.


Use a spoon to scoop the Cubano Cups out of the tin, as you're doing this, drain and leave any excess liquid in the muffin tin and serve with a toothpick.


The ham holds the shape of the muffin tin and you now have a perfectly healthy and indulgent appetizer with all of the flavor and none of the guilt.
